No house in NSW comes down on a handshake. It has to be approved first, the council and your neighbours told, and every service into the building disconnected. We run all of it as part of the contract:

Approvals go in first and set the pace, so the sooner we lodge, the sooner your builder gets the block. While they run we book the disconnections and schedule the machines.
Before anything comes down the site is fenced, signed and set up for dust control, and your neighbours are told which days will be loud. Timber, brick, concrete and metal are separated as they come out, and clean material goes through our EPA approved recycling yard rather than to landfill. Asbestos is removed under our own licence and taken to an approved tipping facility, dockets handed back to you.
Once the structure is gone we lift the slab, footings, paving and pool where they block the new build, then level the ground and walk the finished site with you.
Most Sydney rebuild blocks have a neighbour close by, a shared fence, and sometimes a retaining wall holding up both properties. Australian Standard 2601-2001 and the WorkCover requirements around it exist for that situation. They set the sequence the structure comes down in, where the exclusion zone sits, and how dust and debris stay inside your boundary.
The EPA rules cover where the material goes: sorted, recycled where it can be, tipped lawfully with dockets to prove it. Those dockets and the demolition clearance certificate are what your certifier and builder need next.

A square metre rate is a poor guide for a house. At the same floor area, a fibro cottage with clear side access is not the same job as a two storey brick home hemmed in by neighbours. Asbestos, pools, slabs and access move the figure more than floor area does, so we price after the assessment.

It depends how much of the existing house survives your plans. If the footprint, the slab and most of the structure suit what you want, a partial strip-out and renovation is usually cheaper. Once you are moving walls or dealing with widespread asbestos, that cost climbs toward a rebuild. We do both, so the assessment is not pushing you either way.
